ok.......you can use ANY low carb veggie or meat, to make it how you want it, just adjust your carb count accordingly.

Ingredients:

1 cup chopped mushrooms 
ham ( bacon or sausage or whatever) ...diced
1/2 cup chopped onions 
1 cup chopped zuchinni (brocolli, spinach etc.) 
1 cup grated sharp cheese (mild, swiss...again whatever) 
12 eggs 
water 
Directions:
  1. 9 x 13" pan......spray with pam

  2. Sautee up meat and veggies in butter. Whip up eggs w/ a bit of water add vegies and cheese, bake at 350 for about 1/2 hour (until brown and set in the middle). Cut into 8 squares. Approx 3 carbs each, but remember to adjust carbs for meat and vegie changes. I just cut it up and individually wrap squares and keep in frig. Nuke for 1 minute in morning and there ya have it!
