The first and most important step is finding the biggest soup pot that you own. You'll swear you've never made so much soup before or have ever see it disappear so fast! They will fight for the last bowl.

Ingredients:

First things, first. Prepare all ingredients.

1 bunch green onions including stems, chopped
1 large white onion, chopped
1 large zucchini, in 1/4 sized chunks. 
Slice in 1/2 lengthwise, rotate and slice again. Hold firmly
together while slicing from end to the other, makes perfect
sized chunks.
1 large jicama, into potatoe sized pieces
2 large carrots, sliced thinly (or substitute)
2 cloves fresh garlic, pressed and minced
3 Tablespoon fresh chopped parsley
3 Tablespoon dry basil leaves
1 teaspoon onion powder
4 medium roma style (oblong) tomatoes, in hearty slices1 cup
garden fresh green beans
1 cup fresh green peas, if you have reached that rung 
1 bunch bok choy cabbage. Remove leafy greens and set aside.
Cut stalk into 1/4 sized chunks.1/2 cup anchovy or fish
sauce or 1 tsp regular table salt
1/2 tsp fresh ground pepper
6 cubes Knorr-brand chicken brouillon, extra large
2 lbs boneless chicken breast, big bite-sized pieces.
Directions:
  1. Now throw it all into your soup pot and cover with 4-5" of water above food line.

  2. Cover and begin to slow cook... this a great all day soup!

  3. Stir ocassionally...keep covered.

  4. Once the chicken has fully cooked, taste the broth. Does it need another bouillon cube? Now smell. Does it have a hearty aroma? Need any extra this or a pinch of that? And finally look. Does it have appeal? You be the judge. Don't be afraid of making it your own. It really is flawless. So be daring and enjoy!

  5. Coarsely cut 6 fresh basil leaves along with the remaining leafy greens from the boy choy cabbage and once again set aside. Add 10 minutes prior to serving.
