This afternoon I was really "jonesing" for some PF Chang's
lettuce wraps. Only a couple of problems. The nearest PF
Chang's is 200 miles away and the lettuce wraps aren't
really Atkins friendly. Also the recipe for them on the web
is way too complicated and time consuming. So, here is what
I did.
I took two chicken breasts (boneless and skinless) and 4
large cloves of garlic. I ground them course in my
Kitchenaide with the meat grinder attachment. Then I cooked
the chicken very fast in a wok with chili oil and sesame
oil.
When the chicken was done I added Sugar free Hoisin sauce
(Steele's) and chinese hot sauce. Let it cook some more
until most of the moisture was gone and then served it with
iceberg lettuce leaves. For the uninformed, you spoon the
chicken mixture onto the lettuce leaves and roll, then eat.
