Ingredients:

4 cups spinach
1 T Olive oil
1 T Butter
1 lb Ground beef
1/2 cup Chopped Onion
1/2 t Dried basil, crushed
1/4 t Dried oregano, crushed
1 t Salt
1/4 t Black pepper
4 Eggs
Directions:
  1. Chop the spinach into medium sized pieces.

  2. Heat oil and butter in large, heavy skillet. Add ground beef and cook, stirring, until browned and crumbly. Add onion and cook until tender but not browned. Stir in basil, oregano, salt and pepper. Stir in chopped spinach and cook until the spinach has wilted. Beat eggs, add to meat mixture and cook, stirring, until eggs are set.

  3. 4 servings

  4. For ENTIRE recipe: total carbs=15 gram, total fiber= 5 gram, net carbs= 10 grams.

  5. Net Carbs PER SERVING: 2.5

  6. Note: you can sautee a 1/2 cup of sliced mushrooms while browning the meat. The entire recipe will have a total carb of 17 grams, total fiber of6 grams, net carbs=11. Per serving net carbs is 2.8 grams
